This Week’s Menu
Each week I try to come up with what I think is a pretty well rounded/balanced meal plan for the three of us. I do have help, both P.S. and Cesar both pick a recipe (or two) and a day when they will cook. We try to keep our meals in tune with seasonal produce, but that doesn’t always happen. We are also doing 3-4 veggie meals a week. I have linked the inspiration recipes for many of the dishes.
At the end of the year I fell off the posting wagon, but I still put up all of our menus.

Fri – Caramelized onions and cabbage with chicken over egg noodles
Sat – Thai Fish Curry w/ cabbage
Sun – Out to eat – Bistro Einstein (YUM!)
Mon – Pork Carnitas, black beans (from dried – save 1.5 cups for Wed), served with shredded cabbage, tomatoes, avocado, plain yogurt and hot sauce
Tues – Colcannon Potato Soup w/salad
Wed – (PS) Black Bean, Avocado Rice Salad
Thurs – (C) Burgers, baked beans and carrot raisin salad

Sat – Italian Vegetable Soup, garlic bread, and salad
Sun – Linguini w/roasted cherry tomato, red peppers, capers, and kalamata olives. Salad
Mon – Chicken gorgonzola salad with fig balsamic
Tues – Lentil Walnut Burgers, sautéed zucchini and salad
Wed – Leftovers
Thurs – Stuffed Bell Peppers (Hack, bulgur, mushrooms, carrots, spinach) and salad.

Breakfast – Veggie Quiche. mushrooms, chick pea, green onion
Fri – Cabbage and Mushroom sweet and spicy stir fry w/brown rice
Sat – Turkey fajitas w/zucchini, onions, and peppers. Black beans and Arroz Verde.
Sun – Greek Pork Roast (lemon, garlic, oregano), Sautéed zucchini, and lemon potatoes.
Mon – Red Lentil Soup. Greek salad and bread
Tues – Turkey burgers (mushroom, onion, cheddar). Baked beans and steamed broccoli
Wed – Baked Fish (TBD). Quinoa mushroom and spinach pilaf and salad
Thurs – Kohlrabi Curry w/cous cous

Breakfast: Quiche – smoked salmon, red peppers, mushroom and spinach
Fri – Pizza and Movie Night (delivery)
Sat – Vegetarian Shepard’s Pie (lentils, chickpeas, vegetables and sweet potato top)
Sun – Pot Roast w/carrots, parsnips, kohlrabi, broccoli and mashed potatoes. Salad
Mon – Kale Tahini Salad and leftover roasted vegetables
Tues – Loaded Turkey Spaghetti and salad
Wed – Black bean and Fajita vegetable salad
Thur – Sesame Chicken Thighs, brown rice pilaf, and cucumber salad

Breakfast – 6 grain mix with fruit??/Standard cold breakfast
Fri – Out. First the Persian place, then the new Fast and Furious movie with friends!
Sat – (last week menu)(C) Sesame Chicken Thighs, brown rice pilaf (mushrooms, carrot, and peas), and cucumber salad.
Sun – Pork Steaks, roasted red cabbage, kohlrabi, carrots, onions. Big Salad: spinach, strawberry, walnut, and gorgonzola.
Mon – (C) Broccoli Tofu Soba Noodle bowl
Tues – Chicken Tikka Masala w/basmati. Samosas and tomato cucumber salad.
Wed – Roasted Vegetable Sandwiches (zucchini, red pepper, tomato, onion) w/herbed goat cheese. Salad or Side
Thur – Blackened Fish Salad

Fri – Blackened Fish salad (because Thursday we ended up going to this awesome Slow Food movement event. A yoga hall, two halls filled with food and wine tastings, and items for purchase. SO GOOD!)
Sat – Creamy Cauliflower Soup with mango chutney and cheddar grilled cheese
Sun – Roast Pork Loin with red cabbage, carrots, parsnips, sweet potato and salad
Mon – Veggie Patties on greens with sweet potatoes
Tues – With Leftover pork roast – Parsnip apple stuffing
Wed – Vegetarian Dish TBD
Thurs – Bruschetta chicken, spargle (white asparagus!) and salad

Wed – Chicken Tortilla Soup (leftover chicken from Monday)

Sat: Penne with Sausage, cherry tomatoes and parmesan. Salad
Sun: Roast Turkey Breast with kohlrabi, carrots, onions and broccoli. Green salad
Mon: Wraps with marinated beef, onions, peppers, lettuce. Black beans and rice and cucumber yogurt salad
Tues: Lemon garlic chicken thighs over bulgur with runner beans and a green salad.
Wed: Asparagus, mushroom and white bean skillet. Cottage cheese salad.
Thurs: Grilled Fish Tacos with slaw and chili beans.

Tues – Asian Noodle salad (leftover from Saturday). Add Tofu
Wed – White and Green Chili with salad
