Last weekend a friend was able to extend his business trip to Germany to visit us. We went to a great Indian place one night. We made a delicious mushroom marsala over creamy polenta for dinner. We drank some beer. Wine. Cognac. We visited a castle. We started House of Cards. It was a damn fine weekend.
He brought treats for us from the US. I am super excited.
Tortillas and Bourbon.
real. corn. tortillas. fancy ones. swoon.
and two bottles of bourbon for our drinking pleasure. We can get bourbon here, but the nicer ones we can find tend to be quite pricey. I have not yet, however, seen corn tortillas. And I miss the so. Even the Mexican restaurants we have been to have only had flour tortillas (I think we have only been to two).
So to go fill those up I found this very easy and so tasty recipe for Slow Cooker Shredded chicken on Simply Recipes! Our only modification was to up the cumin a bit, other than that we stuck to the recipe. I even followed the topping recommendations (plus a some cooling yogurt!!) It was great!
We found the heat level was getting to the top of our range, but that is likely due to the fact the the chili powder we have is a package of Hot Chili Powder from the indian grocery. Ha, it has got some kick. Next time we make it I will decrease the Hot chili powder or just use normal grocery store chili powder plus something for heat.

Sun – Vegetarian Sweet Potato Shepherd’s Pie
Mon – Slow cooker shredded chicken tacos (FRESH TORTILLAS from mark!!)
Tues – Creamy Spinach Lentils over quinoa. Cottage cheese with fruit on spinach
Wed – Leftover chicken, roasted broccoli/carrots/cabbage over brown rice w/avocado sauce
Thur – Tofu, red peppers, snap pea stir fry with Soba noodles in Peanut stir fry sauce
Fri – Red bean veggie burger on salad with leftover roasted veggies
Sat – Dijon lemon and dill baked salmon, sweet potato, green vegetable
Breakfast – basic versions of my breakfast salad this week.
