I am nearly recovered from my ACL and meniscus surgery. I finally started PT and I am down to one crutch so I am moving around much better now. Crutches are such a pain!! I am luckily not in any actual pain nor have I been since 2 days after surgery or when PS had to play nurse and give me shots.
The injury, surgery, and lack of mobility was not particularly helpful for the blog posting. PS, Philipp and Cesar were great and took over most of the cooking duties. I however, am not the best at staying out of the kitchen, so on plenty of occasions I tried to sneak in and help before being shooed back to my pullout-couch-turned-bed-for-2weeks.
So….getting back into the swing of things here is This Weeks Menu!

Sat – Out for Sushi
Sun – Tofu, green bean, carrot, red pepper stir fry w/leftover Arroz verde
Mon – Caldo Verde Soup. Bread. Cottage cheese and clementines
Tues – (C) Garlic Chicken w/white wine sauce, egg noodles, and broccoli
Wed – Spicy Cauliflower burgers w/slaw and mashed peas (burger sauce)
Thurs – Szechuan Noodles
Friday – Slow Cooker Tomato Kale and white bean soup w/Grilled ham and cheese
