Tuna Avocado Salad
Super simple lunch recipe. Lots of taste. Tuna plus avocado with a few additions. Eat on salad, bread, crackers, out of the bowl…I won’t judge.
2 cans albacore tuna in water (drained. Reserve drained liquid)
1 avocado, large chunks
1/2 tsp salt
1/4 tsp pepper
2 green onions, sliced
1 medium stalk celery, finely diced
2-3 tbs apple cider vinegar
2 tsp of olive oil
1 tbs fresh dill, chopped
Combine all ingredients in a mixing bowl. Mix until avocado starts to break apart but don’t mash all the pieces. If it is too dry add a bit of the reserved tuna liquid to the mixture.
