Extra long This Week Menu today. I combined this week and last week’s menu since we head out of town tomorrow. I have another short week this week because Baltimore (Clipper City Crossfit Crew – had to find some sort of alliteration to complete the CCC group name) Greek Vacation starts tomorrow. I can not wait to see all these people again.
The eight months or so we spent at the CCC gym before we moved were so fantastic. I loved the workouts, but it was all the fun, encouraging, and lovable characters we met there that made us feel right at home. And make me miss it so much now!
We are meeting up with eight of those crazy kids for 11 days of Greek sun, sea, drinks and food.
The last 2 weeks the boys did a lot of cooking. There was a never-ending head of red cabbage and a lot of pork. There are links to the inspiration recipes from other sites for a number of the recipes. And there will be a few of my own (Cherry Peach Crisp, Island Pork, Greek Veggie Orzo, Pork Quinoa Bowl, and Crunchy Broccoli Salad are in the pipeline!)

Sat – (Cesar) Sweet Potato, Kale and Sausage Bake w/ White Cheese Sauce with salad
Sun – (Cesar) Pork Neck Roast (lechon asado style) with red cabbage slaw, black beans and rice.
Mon – (PS) Curried couscous with brocoli & feta
Tues – Pork and Quinoa Bowl with Red Cabbage Slaw
Wed – (Cesar) Black Pepper Stir Fried Noodles
Thurs – Leftovers
Fri – Veggie Clean out (to be posted) or Greek Vegetable Orzo
Porch G&Ts and friends for dinner
Sat – Chicken Sandwiches with caramelized onions and red cabbage topped with Gouda. With oven fries
Sun – (PS) Pork Loin Roast with Carrots, mushrooms, kohlrabi
Mon – Island Pork Salad with Citrus Basil Dressing
Tues – BLT (or as close as we can get) and Crunchy Broccoli Salad
Wed – Greek Mezze platter w/tabbouli, hummus, tomato cucumber salad, olives and ?? (I wanted tabbouli…right before I go to Greece…I do not always make sense. It is hot.)
