Today I am posting my menu for the week and a quick link to a dinner salad meal I have made quite a few times. I am still dealing with what is probably the worst headache I have had before. Day 2.5. Not cool. If it is still around tonight I am going to head to the clinic to get checked out just in case.

Breakfast – Quiche (ham, mushrooms, peppers, kidney beans, spinach)
Fri – Blackened Fish salad (because Thursday we ended up going to this awesome Slow Food movement event. A yoga hall, two halls filled with food and wine tastings, and items for purchase. SO GOOD!)
Sat – Creamy Cauliflower Soup and mango chutney and cheddar grilled cheese
Sun – Roast Pork Loin with red cabbage, carrots, parsnips, sweet potato and salad
Mon – Veggie Patties on greens with sweet potatoes
Tues – With Leftover pork roast – Parsnip apple stuffing
Wed – Vegetarian Dish TBD
Thurs – Bruschetta chicken, spargle (white asparagus!) and salad
This is recipe I want to share. I found it in a Cooking Light mag years ago. It makes a super flavorful dinner salad. Another recipe I follow pretty closely as long as I can get all the ingredients. The ingredient list is a bit long with a lot of chopping, but everything comes together pretty easily. I have grilled the pork, pan cooked it and oven roasted it. I have also use multiple pork cuts. I always season the meat as described in the recipe, with that and the Amazing salad dressing I have never had this turn out badly.
