I am just trying to catch up a bit. I know, I posted This Week’s Menu (TWM) just 3 days ago, but that was for last week. I am trying to figure out a good schedule for posting and obviously I don’t know what that is yet. BUT, I have 3 recipes I want to share that I am making this week so I had to get the menu out there!

Breakfast – Veggie Quiche. mushrooms, chick pea, green onion
Fri – Cabbage and Mushroom sweet and spicy stir fry w/brown rice
Sat – Turkey (minute steaks) fajitas w/zucchini, onions, and peppers. Black beans and Arroz Verde.
Sun – Greek Style Pork Roast (lemon, garlic, oregano), Sautéed zucchini, and lemon potatoes.
Mon – Red Lentil Soup. Greek salad and bread
Tues – Turkey burgers (mushroom, onion, cheddar). Baked beans and steamed broccoli
Wed – Baked Fish (TBD). Quinoa mushroom and spinach pilaf and salad
Thurs – Kohlrabi Curry w/cous cous
No recipe from me today, but the Lentil Walnut Burgers, patties – whatever you want to call them, I made last week are so good! You should totally try them. I found the recipe here at My Homespun Home sometime last year and they are a regular in my veggie burger rotation. I follow the recipe (gasp!) including the egg in place of the flax and it has been great every time!
Nice and crunchy from the pan fry and a not too squishy interior so it doesn’t totally mash (provided you do not puree into paste!!) if you are trying to eat these on a bun. I love the suggested tzatziki as a topping.
Keep and eye out because over the next few days I am going to be sharing recipes for our breakfast quiche, Arroz verde, and Turkey burgers all made this week!
